Chocolate is considered a popular and great gastronomic invention. Nowadays it has gained a bad reputation because it's related to candy chocolate, where the nutritional composition is higher in sugar and fat.

Pure chocolate should have cocoa as the main ingredient: Cocoa is considered a superfood because it is high in magnesium, potassium, phosphorus, caffeine and antioxidants.

¿How can we differentiate between quality chocolate?

In order to know if chocolate is high quality, we should consider, on one hand, the cocoa percentage. The more concentrated cocoa, the lower the concentration of fats and sugar (we can see the ingredients, where sugar and fat should appear among the last ingredients on the list. This kind of chocolate used to be more bitter.

Last but not least, remember that the combination of fats and sugar has addictive effects. This is the reason why we can't stop eating chocolate when we try it. Is the opposite response when we eat bitter chocolate.

Cocoa is considered a superfood because of its nutritional density. The principal problem is that the industry manipulates it, generating products of poor nutrition quality. If you want to eat it daily, my suggestion is to choose small amounts of bitter chocolate and leave the high fat and sugar occasionally.
