How should I store nuts, seeds and flours?

Keep packs tightly sealed in a cool, dry place away from heat, moisture and sunlight. Nuts, seeds and wholegrain flours contain natural oils, so in warm Australian conditions refrigeration after opening can help preserve freshness. Always follow the best-before guidance on the pack.

Are alternative flours interchangeable?

Not always. Brown rice flour is mild, buckwheat is earthy, besan suits savoury batters and coconut flour is very absorbent. Start with a recipe written for the flour you are using, weigh ingredients where possible and change one thing at a time.

How do I start using chia, linseed and other seeds?

Chia absorbs liquid and forms a gel for puddings and some baking. Linseed is nuttier and comes whole or ground. Pepitas add bite to salads, granola and pesto, while hulled hemp seeds blend easily into smoothies and dressings.

What should I check on the label?

Each pack carries its ingredient list, allergen statement, nutrition information panel and country-of-origin statement. Please read it before use, particularly if you are managing an allergy or intolerance.
